  Being white powder, sodium acid pyrophosphate's molecular formula is Na2H2P2O7 and relative density is 1.86, insoluble in alcohol. Its water solution hydrolyzes to phosphoric acid when heated with diluted mineral acid. Sodium acid pyrophosphate is hygroscopic and can form six crystal hydrates after absorption of water. When heated in above 220℃, it would decompose into sodium metaphosphate.

  Sodium acid pyrophosphate can control fermentation rate when used as baking agent for baking food; decrease product rehydration time, preserve product from sticking and decaying when used in instant noodles; shorten fermentation time, reduce the percentage of damaged seed, make loose space in order and extend storing time while used in biscuits and pastry.

  Sodium pyrophosphate is used as buffer, ferment, modifier, emulsifier, nutrient, preservatives of canned food, etc.
